Gluten Free One Bowl Chocolate Cake!!


We like this recipe better than the original!  (Its more moist the next day, too!)
Preheat oven to 350 degrees.  In a large bow mix together:
1 c. brown rice flour
1 c. sugar (organic evap. cane juice)
1/2 c. cocoa powder
1 t. baking soda
1/2 t. baking powder
1 t. xanthan gum
1/4 t. salt
3/4 c. milk
1/3 c. oil
1 t. vanilla extract
2 eggs, beaten
Mix all ingredients well and pour into a greased, sugared 9 in. cake pan.  Bake for 35 minutes, or until a toothpick inserted in the center comes out clean. Dust with organic powdered sugar before serving.  Bon Appetit!
